First you need to heat up the beer, but be careful not to let it boil - otherwise you would lose all the good alcohol in it. When it´s warm, add the honey and the Christmas spices (we used an orange, cinnamon and mulled wine spices). Let it steep for about 30 minutes. Use this time to squeeze your lemon, measure out the apple juice and eat some mince pies. Now heat the beer mixture up again and add the sugar, apple juice and lemon juice. Give it another 20 minutes until it´s ready. If you’ve got your friends round, just double or triple the quantities.
